Description:
A rich and creamy vanilla ice cream loaded with decadent fudge swirls and mini peanut butter cups. This homemade version of the popular Moose Tracks flavor is indulgent, easy to make, and perfect for chocolate and peanut butter lovers.
Origin:
Moose Tracks was first developed in the 1980s by Denali Flavors in Michigan. Named after a local hiking trail, it combines classic American flavors—vanilla, chocolate fudge, and peanut butter—into one irresistible treat.
Ingredients Quantity:
For the Vanilla Ice Cream Base
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 1 tbsp vanilla extract
- Pinch of salt
For the Fudge Swirl
- ½ cup semi-sweet chocolate chips
- ¼ cup heavy cream
- 1 tbsp butter
- 1 tsp corn syrup (optional, for shine)
For the Add-ins
- 1 cup mini peanut butter cups, chopped or whole
- Extra fudge sauce for layering (optional)
Ingredients Optional:
- ½ tsp espresso powder (to deepen chocolate flavor in fudge)
- ½ cup crushed chocolate cookies for added texture
- Swirl of peanut butter for a double-swirled version
Instruction:
In a medium bowl, whisk together heavy cream, milk, sugar, vanilla extract, and salt until the sugar dissolves. Chill the mixture for at least 2 hours (or overnight) for best texture.
To make the fudge swirl, heat chocolate chips, cream, butter, and corn syrup (if using) in a small saucepan over low heat. Stir constantly until smooth and glossy. Let cool to room temperature but not solidify.
Churn the chilled ice cream base in an ice cream maker according to the manufacturer’s instructions, usually about 20–25 minutes, until it reaches a soft-serve consistency.
During the final minutes of churning, add in chopped mini peanut butter cups.
Transfer half the ice cream into a freezer-safe container. Drizzle a layer of fudge sauce over the top. Add the rest of the ice cream and repeat with more fudge. Use a knife or spoon to gently swirl the fudge into the ice cream.
Cover and freeze for at least 4 hours or until firm.
Tips for Success:
Chill your ice cream base and fudge sauce before churning to prevent melting. Do not over-swirl the fudge to keep nice ribbons of chocolate. Use high-quality peanut butter cups for best flavor. Store in an airtight container to prevent freezer burn.
Recommendation:
Serve scoops in waffle cones, topped with extra fudge drizzle and crushed peanuts. Great for summer desserts, birthday parties, or to make ice cream sandwiches with chocolate cookies.
